Joe,
The PRII is quite a bit different from the PR that you are used to. Paul Rivera designed these and the Super Champ during his brief stint with Fender. The PRII came with a 12" speaker, usually an Eminence for Fender, but an EV 12F was an option.
So going with a 12" is the easiest route here.

I would try an 8 ohm Eminence Tonker. They are very neutral sounding and will not distort when driven by the PRII. They are usually pretty cheap on ebay.
